How do you use lavender? As it continues to flower we've been thinking of different ways to make the most of it in the kitchen:
- to dry lavender, pick sprigs when first in bloom keeping a long stem, tie into bunches and hang in a dark, dry and warm place
- make a lavender sugar for use in baking by grinding 2 dried buds with 3 tbsps of sugar and store in the freezer
- add fresh lavender leaves, lemon zest and mint leaves to your shortbread recipe
- put fresh sprigs in a bottle of gin and keep in the freezer for a deliciously summery gin and tonic

- spike lavender stems into lamb for a brilliant pairing
Do remember that a little goes a long way - you don't want the taste of soap!
